Ice machines service, repair and install must be done by a certified individual. Ice machine are refrigeration systems that automatically freeze and form water into ice, which then dispense for consumer use. They deposit the ice in storage bins and automatically cycle off whenever the bin is full. The freezing surface of the machine is usually made from stainless steel or nickel-plated copper. An ice machine’s water circuits and ice freezing parts should be cleaned regularly. Commercial ice machine have motor controls located throughout the cabinet to operate the system safely, regulates refrigeration control circuits for ice making and harvesting, control floats, solenoids, sensors and switches which monitors system operations.

Manufacture specify that ice machines need to be regularly cleaned and sanitized at least 2 to 4 times per year. Depending on your usage volume, the location of the machine, and the water conditions, you may need to clean it more often. For very heavily used units located near a cooking line, you may need to clean the machine as often as every month. Ice needs to be stored and handled like food, according to public health and safety Canada. 

A commercial ice machine isn’t optional for most commercial kitchens, but choosing what type of ice machine to go with is entirely up to you. Just make sure you get a machine that matches the quantities you need and will satisfy your customers. If you go with a respected brand and ensure that you maintain your machine, you can likely count on using your ice machine for years to come.
